Why
Pasteur boiled beer wort in swan-neck flasks that let air in but kept dust out. He added pure yeast through a heated glass tube and watched the wort ferment into beer that stayed drinkable for weeks or months. When foreign organisms were present in the yeast, even in amounts the most skilled observer could barely find under a microscope, the beer spoiled. It turned sour, bitter, or putrid depending on the type of organism. He was not just observing. He was introducing specific organisms into sterilized liquid and watching what happened. The microscope showed physical objects directly. The beer's condition was something you could taste and smell. Someone who rejects germ theory could perform the same steps and see the same outcomes. Boiled wort with no organisms stayed clear. Pure yeast produced healthy beer. Mixed ferments produced sick beer. If pure yeast had produced sick beer, the claim would have failed. The instrument was a physical lens, not a probe built from a prior model.

Why
Pasteur's beer experiments established a correlation between microscopic organisms and spoilage that anyone can reproduce. The germ theory paradigm takes that correlation and extends it to human disease without the same level of direct verification. In beer, the medium is dead liquid in a glass flask. In a human body, the medium is living tissue with immune function, nutrition, toxicity, and environmental conditions that cannot be controlled the way wort can be boiled. The paradigm treats the organism as the cause of disease rather than as a sign that the terrain has changed. When people carry organisms without symptoms, the paradigm calls them asymptomatic carriers. When people get sick without the organism, the paradigm calls it a false negative. Every negative result has a name that preserves the claim. The beer flask is a controlled system. The human body is not. The paradigm assumes what it proved in beer applies to living hosts, and it has never independently verified that assumption.

On ne saurait aller plus loin dans les preuves de la corrélation qui existe entre ces derniers et les altérations proprement dites de la bière. Ce n'est pas par des preuves plus décisives qu'on établit la relation de cause à effet dans la succession des phénomènes physiques.
